Peach, Carrot & Walnut Cake

Ingredients

Maida: 1 1/2 cups
Sugar: 1 cup
Grated Carrot: 1/2 cup
Peach: 1
Baking Powder: 2 tsp
Orange Juice: 1/2 cup
Vanilla Essence: 1/2 tsp
Cinnamon Powder: 1/2 tsp
Finely-Chopped Walnuts: 1/3 cup
Salt: 1/4 tsp
Coffee Powder: 1 1/2 tsp
Oil: 3 tbsp

Method

1. Sieve the maida and baking powder together three times. Powder ½ cup of sugar and add to the maida.

2. Puree the peach in the mixer and add to the above, also add the grated carrot and orange juice.

3. Add the cinnamon powder, vanilla essence, salt, coffee powder, and oil.

4. Mix all the ingredients well.

5. Pre-heat the oven to 180°C.

6. Pour the cake mixture on a greased tray, sprinkle the chopped walnuts on top, and add ½ cup of sugar on top of the cake mixture.

7. Bake for 30 minutes.

8. Cool well and serve.
