Sweet Potato Cake

Sweet Potato Cake

Lightly spiced sweet potato croquettes flavoured with toasted coconut and garlic and coated with sesame seeds which your kid will love to eat.

Sweet Potato Cake

Preparation Time: 15 min
Cooking Time: 30 min
Serves 4 to 6

Ingredients
450 gms sweet potato
2 tbsp chopped coriander
50 gms dessicated coconut , toasted
1 tbsp soy sauce
1 tbsp lemon juice
1 tbsp plain flour, for your hands
1 tbsp oil
6 cloves of garlic
4 green chillies, chopped
50 gms sesame seeds
salt and black pepper powder to taste
oil to shallow fry

Method
1. Peel and boil the sweet potatoes. Allow it to cool.
2. Drain well and mash in a large bowl.
3. Heat the oil and fry the garlic and green chillies for a while. Add to the mashed potatoes.
4. Add the chopped coriander, toasted coconut, soya sauce, lemon juice, salt and pepper.
5. With lightly floured hands, form the mixture into small croquettes.
6. Dip the croquettes in sesame seeds and press firmly so that they stick on the surface.
7. Shallow fry in oil till golden brown.
8. Serve hot.
