Paneer Toasty Sandwich

Protein and calcium are crucial for a child's growth and development. Try this calcium- and protein-rich sandwich is nutritious and yummy. It works as a quick breakfast, lunch, or snack option and kids enjoy it the most.

Makes: 2 sandwiches

Ingredients
Whole-Wheat Bread Slices: 4 nos.
Iceberg Lettuce: 2 leaves
Butter: 1 tsp

For the Filling:
Soaked & Boiled Rajma (Kidney Beans): 1 cup
Grated Paneer: 2 tbsp
Oil: 2 tsp
Finely-Chopped Onions: 2 tbsp
Finely-Chopped Green Chillies: 1 tsp
Finely-Chopped Tomatoes: 2 tbsp
Chilli Powder: A pinch
Salt: To taste
Finely-Chopped Coriander: 1 tbsp

Method:
For the Filling:
1. Heat the oil in a broad non-stick pan, add the onions and green chillies, and sauté on a medium flame for 1 to 2 minutes.
2. Add the tomatoes, chilli powder, paneer, salt, and coriander; mix well and cook on medium flame for 2 to 3 minutes, while stirring occasionally.
3. Divide the filling into 2 equal portions and keep aside.

Proceed With
1. Place 2 bread slices on a clean and dry surface, and apply ¼ tsp of butter on each slice.
2. Put 1 portion of the prepared filling in the centre of 1 buttered slice and spread it evenly using the back of your spoon.
3. Cover with the other slice and cut the sandwich diagonally.
4. Repeat steps 1 to 3 to make 1 more sandwich.
5. Serve immediately.
