Sticky Date Pudding

Sticky date pudding is an extremely delicious dessert. It is normally eaten with caramel sauce, ice cream and strawberries, but you can have it as it is or with any other sauce of your choice. It uses dried dates which are rich in iron and fiber and are very tasty. Find the recipe for the mouth-watering dessert below:

Ingredients:

• Dried, chopped dates - 1 cup
• Refined flour (maida) - 1 ½ cups
• Baking powder - 3 tsp
• Baking soda - 1 tsp
• Butter - ½ cup
• Castor sugar - ¾ cup
• Eggs - 2
• Water - 1 cup
• Vanilla essence - 1 tsp

For the sauce:

• Butter - ¼ cup
• Sugar - ½ cup
• Fresh cream - ¼ cup
• Vanilla essence - ½ tsp

Method:

• In a small pan, add water and dates and bring it to boil. Add baking soda, stir well and keep it aside for 10 minutes.
• In a large bowl, mix together butter and sugar till it turns creamy.
• Add 1 egg at a time and beat well.
• Add vanilla essence, flour, baking powder and date mixture and mix well.
• Pour the batter to a greased cake pan or muffin tray and bake in a preheated oven for 40-45 minutes at 1800 C.

For the sauce:

• Mix all the ingredients together and heat on medium flame for 5 minutes or until smooth

How to proceed:

• Remove the cake from the tray and cut into triangular pieces. Pour a tablespoon of sauce over it and serve.
• You can add a scoop of ice cream and/or few pieces of fresh strawberries while serving.
