This recipe looks rich and creamy, but is actually really light and refreshing. Mixed with roasted peanuts, the recipe boosts flavor, aroma and texture.

Makes: 4 servings
Ingredients:
Finely chopped red pumpkin or bhopla- 2 cups
Ghee- 1 tsp
Cumin seeds- 1 tsp
Finely chopped green chilies- 2 tsp
Sugar- 1 tsp
Hung curd- 1 ½ cup
Milk- 2 Tablespoons
Roasted peanuts- 2 table spoons
Salt to taste
Chopped coriander to garnish
Method:
• Heat 1 tsp of ghee in a deep pan
• Add cumin seeds and let it crackle
• Now add pumpkin, green chilies, salt, sugar and stir well
• Cover and cook for 5 minutes, while stirring occasionally
• Remove from the flame and cool it
• Once cooled, blenderize it in a mixer
• Add 2 tablespoons of milk to hung curd and beat it till smooth
• Mix the pumpkin and curd together and refrigerate for an hour
• Garnish with roasted peanuts and coriander
• Serve chilled
Tip: You can use olive oil instead of ghee and avoid sugar and peanuts, to make this recipe low calorie.
