This colorful mixed vegetable pulao would be perfect for a main course. The addition of crunchy cashews, onions with assorted spices gives a tasteful punch.

Ingredients
Cooked Rice- 3 cups
Mixed vegetables (carrots and french beans)- 3/4 cup
Onions (chopped)- 1/4 cup
Onions (deep fried)- 1/2 cup
Cashew nuts ( roasted )- 2 tbsp
Bay leaves - 2
Cinnamon-1 stick
Cloves - 2
Oil -1 tbsp
Coriander ( Chopped) - 2 tbsp
salt to taste
Method
- Heat the oil in a broad non-stick pan, add the bay leaves, cinnamon, cloves and sauté on a medium flame for a few seconds.
- Add the onions and sauté on a medium flame for 1 minute.
- Add the cooked rice, vegetables, half of the fried onions, coriander and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Serve hot garnished with fried cashew nuts and the remaining fried onions.
