Summer salad

The lemon and honey dressing with the flavour of ginger makes watermelon, cucumber, pineapple and sweet corn even tastier. With the goodness of iron, vitamin A, vitamin C and cancer fighting properties of the ingredients, this recipe transforms to something very nutritional.

Makes 4 servings

Ingredients


For ginger dressing
• 1/2 tsp grated ginger
• 2 tsp lemon juice
• 1 tsp honey
• 1 tbsp low fat curds
• 1 tbsp milk powder
• salt to taste

Other ingredients

• 2 cups watermelon cubes
• 1 cup pineapple cubes
• 1 cup boiled sweet corn kernels
• 1 cup cucumber cubes
• salt to taste
• 2 tbsp grated carrot for the garnish

Method


For the ginger dressing
1. Combine all the ingredients together in a bowl and whisk well. Refrigerate to chill.

Proceed with


1. Combine the watermelon, pineapple, corn, cucumber and salt together in a serving bowl and mix well. Refrigerate to chill.
2. Just before serving, pour the dressing over it and toss gently.
3. Serve immediately, garnished with carrots.
