Baked Paneer in Spinach & Tomato Sauce

Get the better of both worlds, with the mix of two delicious sauces in one dish.

Preparation Time: 15 minutes

Cooking Time: 18 minutes, 30 seconds

Makes: 6 servings

Ingredients:

For the Spinach Sauce:

Spinach (Palak)- 4 ½ cups

Finely-Chopped Onions- 1

Plain Flour (Maida)- 2 tsp

Finely-Chopped Green Chilies- 3

Finely-Chopped Ginger- 1 small piece

Oil- 2 tsp

Salt- To taste

For the Tomato Sauce:

Tomato Ketchup- ¾ cup

Other Ingredients:

Paneer- 200g, in cubes

Mixed Vegetables- 1 ½ cup

Method

For the Spinach Sauce:

  • Clean, wash, and microwave the spinach in a bowl for 30 seconds until it’s well cooked.
  • Cool and blend it in a mixer.
  • Put oil in a microwavable bowl and put it on high for about 15 seconds.
  • Add the onions, green chilies, and ginger, and microwave for about a minute, stirring every 30 seconds.
  • Add the flour and microwave for 15 seconds.
  • Now add the spinach puree, salt, and microwave on high for a minute.

How to Proceed:

  • Put the vegetables in a shallow dish, dribble around 6 tbsp of water on it and microwave for 3 minutes.
  • Add the vegetables and paneer to the spinach puree, season with salt, and spread in a shallow dish.
  • Pour the tomato ketchup over it and garnish with grated paneer.
  • Microwave on high for 3 to 4 minutes.
