Melon Gazpacho and Lettuce, Feta, Celery, and Green Apple Wrap

Here are the recipes of two healthy dishes that make the perfect dinnertime combo. Enjoy!

Melon Gazpacho

(Serves 4)

700 g musk melon, peeled and diced
250 g cucumber, peeled, cored and diced
40 g green bell pepper (capsicum), cored and diced
1 garlic clove
10 basil leaves
1 tbsp sherry vinegar
50 ml extra virgin olive oil (I would use only about 5 to 10 ml oil)
1 bread slice, crust removed and soaked in water
6 ice cubes crushed
Salt to taste

Method

  1. Mix all ingredients together and blend in a food processor until smooth.
  2. Adjust consistency by adding cold water.
  3. Serve chilled.

Lettuce, Feta, Celery and Green Apple Wrap

(Serves 4)

2 bunches Cos lettuce (you can substitute with any other lettuce if you wish)
4 green apples, cut into juliennes (thin strips)
100 g feta cheese
60 g celery, chopped
1 tsp powdered sugar
1 lemon
2 tbsp extra virgin olive oil (I would use only 1 tsp oil)
32 chives, blanched to taste
1 tsp crushed black pepper
Salt to taste

Method

  1. Mix together all ingredients except lettuce and chives.
  2. Place the apple mixture on lettuce, wrap around and secure with blanched chive like a string.
