Here are the recipes of two healthy dishes that make the perfect dinnertime combo. Enjoy!
Melon Gazpacho
(Serves 4)
700 g musk melon, peeled and diced
250 g cucumber, peeled, cored and diced
40 g green bell pepper (capsicum), cored and diced
1 garlic clove
10 basil leaves
1 tbsp sherry vinegar
50 ml extra virgin olive oil (I would use only about 5 to 10 ml oil)
1 bread slice, crust removed and soaked in water
6 ice cubes crushed
Salt to taste
Method
- Mix all ingredients together and blend in a food processor until smooth.
- Adjust consistency by adding cold water.
- Serve chilled.
Lettuce, Feta, Celery and Green Apple Wrap
(Serves 4)
2 bunches Cos lettuce (you can substitute with any other lettuce if you wish)
4 green apples, cut into juliennes (thin strips)
100 g feta cheese
60 g celery, chopped
1 tsp powdered sugar
1 lemon
2 tbsp extra virgin olive oil (I would use only 1 tsp oil)
32 chives, blanched to taste
1 tsp crushed black pepper
Salt to taste
Method
- Mix together all ingredients except lettuce and chives.
- Place the apple mixture on lettuce, wrap around and secure with blanched chive like a string.
